Kataif is a traditional Middle-Eastern dessert, which is cooked on one side stuffed with cheese or nuts, deep fried n soaked in sugar syrup and served. They can also be stuffed with cream and served with sugar syrup The dough is a shredded wheat material, though, and is much easier to use than the filo dough for baklava.  Kataif dough is one, pita is another, and Chinese glass noodle nests are another. In each of these foods, there is a certain magic in the way the raw material behaves during the cooking process.
